Zingerone, also called vanillylacetone (CAS: 122-48-5, EINECS: 204-548-3) is used in food and flavor industry. Zingerone, also called vanillylacetone, is a key component of the pungency of ginger. Zingerone is a crystalline solid that is sparingly soluble in water, but soluble in ether. Zingerone is similar in chemical structure to other flavor chemicals such as vanillin and eugenol. It is used as a flavor additive in spice oils and in perfumery to introduce spicy aromas. The plants from the Zingiberaceae ginger (Zingber officinale Rosc.), My Lai cardamom seeds (Amomun melegueta Roscoe),may also be vanillin with acetone hydrogenating catalyst, can be regarded as capsaicin homologues.
